Julio Bouchon, Pais Salvaje 2020 Alsace Serve in 3-5 years onThis is as wild and natural as it gets. In 2017 30% of the grape were macerated carbonically. It has pale blush of red colour, with aromas reminiscent of chicory, a distant trace of bush fire, a raspberry pippy purity and a juicy, evocative, naive beauty. The 2018 has no carbonic or smoke but is no less beguiling.
