The Cider is matured in Speyside whisky oak barrels for 18 months, making it equally fruity, smokey, and spicy, with a gentle, bittersweet finish. As the cheese ages, the cider wash comes to the fore, supplying notes of green apple skins and a little Oakwood smokiness. Its a complex and truly delicious cheese from David Jowett
