From a family vineyard with a density of 8,000 plants per hectare, an average age of 30 years, a yield of 25 hl ha on clay limestone soil in the municipality of Frontenas (Beaujolais meridionale). The harvesting of the grapes, cultivated organically, is manual and after a cooling to 12 degrees the traditional pressing takes place with a vertical press of wood.
